Fit Food Friday: Salad in a Jar

If you know me – I really don’t like to spend that much time in the kitchen.  And – I am DEFINITELY not one to prep anything ahead of time.  HOWEVER – the weeks that I have managed to have my stuff together and thought ahead for the upcoming week – imagine how much healthier I ate!!!  Well …. A little healthier – but believe me I had much less stress and spent MUCH less money.

Whatever your motivation is – less stress, being healthier, saving time or saving money – prepping meals on Sunday can benefit you.  And my absolute favorite thing to prep are salads in a jar.  One – they are SUPER easy (there are no hard or fast rule and NO measuring) – two – they look pretty – and three I feel super eco-friendly when I am using mason jars.  (Ok –  know the last reason sounds silly …..  but it is motivating to me!)

Need some suggestions about how to get started – well, get started once you have purchased the jars?  Remember the part about no rules and no measuring …. Well ….. almost no rules – just suggestions for keeping things fresh and crisp

The dressing goes in first. This is so important! This guarantees that your salad ingredients don’t get soggy.

Then go with a grain or a protein, or anything else big and chunky. This protects your more delicate ingredients from getting wet.

Then the fixings. Little things like shaved nuts, raisins, cheeses. The ingredients that you want to stay dry until just before you eat it.

And if you have any leafy greens, they go in last. That way when you turn the Mason jar over and unload it all into a bowl, the greens will make the salad bed. So awesome!

Here are a few of my favorite combos – but feel free to create your own!  Again – no rules – just tasty, easy, stress-free, money-saving options!

 

EASY PEASY Greens (AKA – Whatever I have in the refrigerator Salad)

Oil and Vinegar (Play around with different kinds for new flavor combination.  A local, MN place to purchase different combinations is Olive You on Selby Ave in St. Paul.)

diced cucumbers

diced tomato

diced red pepper

arugula

baby spinach

raw cashews

spices (Again – play around with the flavors.  If I am using a basic apple cider vinegar and olive oil I will add some spices from Penzeys.  My new favorite is the Pico and Salsa combo!!!)

 

Butter Bean Bliss

Oil and Vinegar

sweet Maui onion, diced

butter beans

raw walnuts

Quinoa

arugula + baby chard

 

Quinoa Oasis

Oil and Vinegar

red onion

shredded carrots

Mexican Party
